We begin with breakfast and a welcome before touring the facilities and discussing how you would like your lamb prepared. The rest of the day is built around that conversation.

We start together in the shop before heading through for a short tour and discussion.

We talk through how you cook at home, joint sizes, chop thickness and any specific preferences.

A practical session on knife sharpening and understanding the tools used in traditional butchery.
Full Lamb Breakdown
Working through the side of lamb step by step, identifying cuts and understanding their uses.
Boning and Trimming
You will bone, trim and prepare joints yourself, with guidance throughout.
Stringing and Finishing
Learning how to string joints correctly and finish cuts properly for cooking or freezing.

Yes. That is a key part of the day. We begin with a conversation about how you cook, how you like your steaks cut, how large you prefer your joints, and whether you want more roasting cuts, braising cuts or steaks. The side is prepared to your specification, not a standard template.

Comfortable clothing and closed footwear. This is a working butchers shop and a practical day. We recommend wearing layers that you can take on and off throughout the day. We provide guidance and equipment as needed.
