COTECHINO – Poaching sausage


Rustic, high collagen, meltingly gelatinous sausage. Traditionally served steamed with lentils in Italy. Or add to a stew, thickly sliced or whole. Serves 3-4 adults, depending on greediness.

Cooked cured sausage. Reheat and serve piping hot.
