GOULA – air dried pork jowl


Goula (known in Italy as Guanciale) is the word in South-Western France for pork Jowl. Mine is simply spiced with pepper and chilli after salting and air dried until it can be sliced thinly and eaten raw. It has a lovely sweetness and distinctive firm texture.

Essential element of authentic carbonara!

No nitrites/nitrates added.
