Butchery Masterclass

Spend the day behind the counter at Edge & Son, learning traditional butchery across poultry, lamb and pork, with demonstrations of beef breakdown and curing methods.

This is a hands-on, small-group day designed for serious home cooks and anyone who wants to understand meat properly.

You will leave with a selection of meat and goods prepared during the day, along with practical skills you can use immediately at home.

More importantly, you will understand where different cuts come from, how they are prepared and how to get the best from them in your kitchen.

What the day involves

This is a full, varied day that gives you a clear understanding of how different animals are processed and prepared.

You will learn knife skills, break down poultry yourself, bone and string lamb, prepare pork for curing, bone beef and watch full forequarter and hindquarter demonstrations from our butcher.

It is practical, honest and rooted in traditional methods.

You will not be standing back all day. You will be involved.

Yes. You will be breaking down poultry, boning beef and lamb and tying joints yourself. This is hands-on learning.

Numbers are kept deliberately small to ensure proper attention and a calm pace.

We begin at 10.30am and usually finish around 2.30pm. This is a full, unhurried day. We allow the time needed to do the job properly, talk through each section in detail, and make sure you are confident at every stage.

A delicious lunch is included, along with refreshments during the day.

Comfortable clothing and closed footwear. This is a working butchers shop and a practical day. We recommend wearing layers that you can take on and off throughout the day. We provide guidance and equipment as needed.
